Cauliflower Chocolate Chip Muffins- Take 2

I'm made some further revisions since I first posted this recipe. It now includes even more whole grains and omega-3's.

Runblondie26's Cauliflower Chocolate Chip Muffins (Take 2):
  • 1 3/4 c whole wheat flour
  • slightly more than 1/2 c uncooked multi-grain hot cereal* ground down to make 1/2 c flour
  • 2/3 c splenda (or sweetener of your choice)
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1 tsp vanilla extract
  • 1 chia egg**
  • 1/4 c Egg Beaters
  • 1/2 c skim milk
  • 1/4 c melted butter (1/2 stick)
  • 2 large ripe bananas
  • ~1 c chocolate chips
  • 12 oz frozen cauliflower (lightly thawed in the microwave, squeeze out excess water with a paper towel)
1) Preheat oven to 400 degrees. Coat your muffin pan with non-stick cooking spray. 2) Put the cauliflower and banana together in a food processor, and puree till smooth. 3) Transfer the puree to a mixing bowl and add in the rest of the wet ingredients. 4) Mix the dry ingredients in a separate bowl. Fold the wet ingredients into the dry ingredients. Do not over mix. 5)Then bring on the chocolate chips. Be as generous as you like. Lightly stir until combined. 6) Pour the batter into your muffin tins and bake for ~20 minutes.

* I like Bob's Red Mill 5 Grain Rolled Hot Cereal

** Make chia egg by mixing 1 tbsp chia seeds with 3 tbsp water. Allow to sit for ~15 mins until a gel like consistency is reached. Or use an addtional 1/4 Egg Beaters in place of the chia egg.
